This week’s star ingredient is cabbage. In my recipe I have used Pak Choi, also known as Chinese cabbage or Napa cabbage. Cabbage is a powerhouse for juicing with an array of health benefits.
Why Cabbage?
Nutritional Benefits: all forms of cabbage are low in calories but packed with essential vitamins and minerals, including vitamins C and K, fibre, and antioxidants.
Cancer Prevention: Contains phytochemicals that may inhibit the growth of cancer cells.
Heart and Bone Health: High levels of vitamin K support bone health, while antioxidants promote cardiovascular well-being.
Cabbage is a good source of betacarotene, vitamin C, sulphur and if grown in mineral rich soil – selenium, a trace element that plays a big role as a cancer fighting agent as well as protecting against heart disease and inflammatory conditions such as arthritis. Selenium, considered an anti ageing mineral, promotes healthy looking skin, increases male potency.
Cabbage is also inundated with amino acid ‘Glutamine’.
Looking at a study back in the 1940’s, with Dr Garnet Cheney, he theorised that stomach ulcers might be pre cursors to colo-rectal cancer. Working with 65 volunteers, all of whom suffered from stomach ulcers, they began intensive cabbage juice therapy. Each subject drank 1 quart of cabbage juice a day, because the concentrated juice resulted in so much gastric upset, they changed the formula to cabbage, celery and carrot juice. Within the 3 weeks, all but 2 of the patents were healed and the two hold outs had only minimal symptoms.
Today, research is underway investigating this amino acid’s role in relieving or curing extreme colitis and curbing alcohol cravings.
